Daily sampling and analysis of the Robola grapes ensured that they were picked at optimal ripeness. The grapes were hand harvested and chilled. They were then sorted, de-stemmed and crushed. Only the free run must was fermented in stainless steel. Each year Gentilini keep back a small amount of wine in a Fleur de Quintessence French oak barrel. This allows them to blend wines using the solera method, adding complexity and depth to the finished wine. The 2024 Crossed Paths has 8% Robola from 2015 - 2023. After blending, the wine sits on its fine lees with a weekly bâtonnage for 6 months before cold stabilization and bottling. The 2021 Shiraz was destemmed to open top fermenters with heading down boards. Twice daily pumpovers were carried out to ensure maximum extraction of colour, flavour and tannin from the grape skins. The wine was basket pressed to 50% new French and American oak Puncheons for 18 months maturation.
